Ham & Potato Frittata

Tried out a new recipe tonight.  It was good and everyone ate it well.  After Luke got going.  And after I realized Leta wanted to run the spoon and feed herself.  By Herself, thank you very much.

Ham and Potato Frittata
1 onion
1 green pepper
3 T oil
3 potatoes
Salt and Pepper, to taste
2-3 cups cubed ham
2 c shredded cheese
5 eggs
1 1/2 cups milk
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1/4 tsp cumin


Dice onion, green pepper and peel and dice potatoes.  Add onion, pepper, and potatoes to large skillet with hot oil. Add S&P to taste  Cook for 15 minutes, stirring frequently until the potatoes are tender and starting to brown.  Layer ham and cheese on top of the potatoes.  In a small bowl, whisk together the eggs, milk and remaining seasonings.  Pour into skillet.  place in the oven at 350 degrees and bake for 25-30 minutes until set. Let rest out of oven about 10 minutes.  Cut into wedges and serve.


If you don't have an oven proof skillet, you can prepare this in a casserole dish.


This should be a relatively cheap meal to make, given you get your cheese at a decent price.  And with grocery prices what they have been?  A nice inexpensive meal is just what the accountant ordered.
